Mid May at the Farm

It’s noticeably warmer on the farm lately and we begin our days ever earlier in order to complete our chores before the sultry heat sets in. The snap and crackle of dry season is almost over and the animals seem ready to taste the lush, emerald green grass of summer. They are up even earlier than we are, moving about in the misty dark air, relishing the cool dewy grass.

The garden rows, once covered in winter greens, have been tilled under, tucked in with mulch, and left to rest before the summer crops are nestled into their new home. From the garden, Cranberry Hibiscus, Red Russian Kale, and Broccoli shoots are what we highlight for you this week, and from the pastures, Red Wattle Pork Belly.

Our organically raised and pastured Pork Belly that we are serving this week is generously rubbed with our Rosy Paleo Salt, adding a great sweet and savory kick. The Pork Belly soaks up all of that wonderful flavor overnight, then we slowly roast it until tender, and finish with a quick blast of high heat to create a crackly, crispy top.

Organically Raised, Pastured Meats
Boston Butts, Picnic Hams and Pork Bellies

Get your 3 pound pork Bellies and 3-8 pound Bostons or Picnics this week. Boston lives high on the pork shoulder and the Picnic lives low, but they are similar cuts. Find out more about them here. You couldn’t ask for an easier cut of meat. Most recipes require a little prep, then just set your oven or slow cooker on low and walk away.

Most of our menu and to-go items are straight from this farm, making them healthy, delicious and naturally gluten-free. We list them here with a GF indicating that they are Gluten Free. Another popular seasoning salt from our organic gardens. It’s wonderful as a finishing salt, sprinkled on just before serving to add succulent flavor to pizza, fresh pasta, mashed potatoes, and meats.

Kick and tang, with just a little hellfire, our organic chilis bring out the flavors of a dish instead of smothering it.

Our favorite organic herb infused in white wine vinegar. Fabulous in salad dressings, drizzled over roasted vegetables, fish, or chicken, splashed into soups and stews.
