Dear Friends of the Farm:

We are so excited to tell you that our special organically-grown produce, our organically-raised Freedom Ranger chickens, and our organically-raised heritage breed Red Wattle pork is going to be featured in a culinary celebration of Southwest Florida at the famed James Beard House in New York City.  Chocolatier Norman Love, Chef Todd Johnson, Chef Harold Balink, and George Fistrovich, all of whom give so much to this community, will be representing Southwest Florida at what will be a spectacular dinner.  If you’d like to join us in New York City, the tickets for the event go on sale on August 1st. We’d love to see you all there!

Organic, Pastured Red Wattle Pork

This pork is not your other white meat, but rather a rich and flavorful meat that is exceptionally lean and juicy with a beef-like taste and texture. This heritage breed is listed on the Slow Food Arc of Taste for its amazing flavor—just one of the reasons why we choose to raise this breed. Get your taste buds reconnoitered to what pork flavor is all about. We are also excited about our in-house, old-school butcher who is providing us with heritage cuts. Thick cut pork chops both bone-in and boneless, rolled loin roasts, pork belly, hocks and more. And, we heard you about the large sizes. You want smaller – here they are: beautiful, small ham roasts and shoulder roasts, knuckle roasts, ribs, jowls, pork sirloins and more.

    Thai basil is sometimes referred to as anise or licorice basil, and the flavor is peppery and warm, and although there is a difference between Thai basil and common sweet basil, they can be substituted for each other in most recipes. The Thai variety tends to hold its flavor better when cooked than its Mediterranean cousin does.

  • Cuban Oregano
    Cuban oregano is an herbaceous tropical plant that thrives in our garden. It has traditional medicinal uses in Asian cultures, and is a culinary herb that rivals oregano and thyme for its robust, aromatic, similarity of flavor.
  • Mexican Mint Marigold
    Mexican mint marigold is another herb that thrives in our summer garden. Its heady licorice-anise taste and aroma is  revered as a successful stand-in for French tarragon. Chop the fresh leaves and use them to season chicken and tossed green salads, or brew them into a sweet, anise-flavored tea. The dried leaves retain their fragrance well if kept in a sealed glass container and protected from extreme heat and bright light.

Rosy’s Paleo Salt  GF V VG

Back by popular demand, our delicious finishing salt made with pure Himalayan sea salt and a proprietary blend of spices adds succulent flavor to both meats and vegetables. 

Rosy’s Roaster Rub  GF V VG

This rub is made with select herbs from our organic gardens. Rub the outside of a chicken and the cavity with olive oil and season well with this special rub. It’s also delicious on fish, grilled or roasted vegetables and tofu.

Lil Hellfire Vinegar  GF V VG

Kick and tang, our organic chili vinegar bring out the flavors of a dish instead of smothering it. 

Mint Marigold Infused Vinegar  GF V VG

Our favorite organic herb infused in white wine vinegar. Fabulous in salad dressings, drizzled over roasted vegetables, fish, or chicken, splashed into soups and stews.

Our menu items are straight from the farm, making them healthy, delicious and naturally gluten-free. We list them here with a GF indicating that they are Gluten Free. Vegetarian foods are listed with a V and Vegan foods with a VG. We practice caution in preparing our gluten free items but we are not a gluten free environment. In consuming our gluten free items, be aware that there may be a chance of cross contamination. Our patrons are encouraged to consider this information in light of their individual requirements and needs. If you have a severe sensitivity to gluten, please note that this is a shared kitchen.
