Join us for the party! We are so excited to welcome the talented Chef Harold Balink of Cru Restaurant to the farm as the very first chef who will formally open our Chef-to-Farm Series. This series will showcase the area’s most talented chefs, celebrating the unique cuisine of Southwest Florida. The chefs will cook in our new state-of-the-art kitchen using the organic bounty from our 100 acre farm. Also here is Stephanie Summers of Fox News who will be filming our farm for an upcoming segment. On the baby grand the always spirited, Dan Tudor, playing all the favorites.

Organic, Pastured Chicken
We have just a few of our organically raised and pastured chickens this week and these will be the last till August. Those of you who were fortunate enough to get these pure and tasty whole chickens know that the flavor is unlike any chicken you’ve probably ever tasted – if you’re under the age of 50. These are the chickens of our grandparents, slow grown on beautiful green grass and given a certified organic feed that is both soy and GMO free. No hormones, no antibiotics, no steroids, no pesticides, no herbicides. (Have we forgotten anything? If we have, it doesn’t have that in there either). Come and get your real farm raised chicken on Wednesday!
Organic, Pastured Red Wattle Pork
This pork is not your other white meat, but rather a rich and flavorful meat that is exceptionally lean and juicy with a beef-like taste and texture. This heritage breed is listed on the Slow Food Arc of Taste for its amazing flavor and is why we choose to raise this breed. Get your taste buds reconnoitered to what pork flavor is all about. We are also excited about our in-house, old-school butcher who is providing us with heritage cuts. Thick cut pork chops both bone-in and boneless, rolled loin roasts, pork belly, hocks and more. And, we heard you about the large sizes. You want smaller – here they are: beautiful, small ham roasts and shoulder roasts, knuckle roasts, ribs, jowls, pork sirloins and more.

Rosy’s Roaster Rub GF V VG
Just in time for your whole roasters from our pastures, this rub is made with select herbs from our organic gardens. Rub the outside of the chicken and the cavity with olive oil and season well with this special rub.
Mint Marigold Infused Vinegar GF V VG
Our favorite organic herb infused in white wine vinegar. Fabulous in salad dressings, drizzled over roasted vegetables, fish, or chicken, splashed into soups and stews.
